Ingredients:
- 250g Lasagna sheets
- 100g Pesto
- (Plant-based) 500ml Milk
- 1 Broccoli
- 300g Frozen spinach
- 250g Ricotta
- 50g Butter
- 40g Flour
- 125g Mozzarella
- 40g Parmesan cheese
- Pine nuts
- Pepper
- Salt
Instructions:
- Prepare the broccoli by boiling it in water for 8 minutes, then drain. Cut the broccoli into small pieces. Meanwhile, preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit) and grease a baking dish.
- Warm the frozen spinach in a saucepan, then mix in the ricotta.
- For the pesto sauce, melt 50g of butter in a saucepan. Once browned, add the flour and stir. Gradually add the milk in small amounts, repeating until a thick sauce forms. Finally, mix in the pesto, and season with salt and pepper.
- Now, assemble the lasagna. Spread a layer of pesto sauce on the bottom of the baking dish, followed by a layer of lasagna sheets. Add half of the spinach-ricotta mixture, another layer of lasagna sheets, and then the pesto sauce and broccoli. Top with the remaining spinach. Add another layer of lasagna sheets and the rest of the pesto sauce. Season with parmesan, mozzarella, pine nuts, pepper, and salt to taste.
- Bake the lasagna in the oven for 30-40 minutes, or until the top turns golden brown. Keep an eye on it.
