Craving a savory, warm meal but don’t want to spend too much time in the kitchen and still want to get some veggies in? This ravioli dish is easy, delicious, comforting and quick to put together. The sauce pairs well with any type of ravioli, and the dish can be made vegetarian or vegan.

Items Needed:
– Cheese grater
– Garlic press (if desired)
Ingredients:
– Ravioli of your choice
– Arugula
– Tomato paste
– (Soy) cooking cream
– Garlic
– Shallots
– Eggplant
– Parmesan cheese (Vegan)
– Salt and pepper
– Pine nuts (optional)
Instructions:
1. Slice the eggplant into thin rounds and sauté them in a pan until they are soft. Add your preferred seasonings (paprika, garlic, turmeric, pepper, and salt). Set the eggplant aside.
2. Meanwhile, finely chop the shallots and garlic and sauté them in the pan after the eggplant is done. Season with salt and pepper to taste. Also, bring a pot of water to boil. Once boiling, add the ravioli. Turn off the heat when the ravioli is cooked (according to the package cooking time).
3. Add the tomato paste to the sautéed shallots and garlic in the pan, and cook for a short time (about 3 minutes). Then, add the cooking cream and stir well. Once done, add the cooked ravioli.
4. Now, assemble the plate. Start with some arugula on the plate, then add the ravioli with sauce, followed by the eggplant slices. You can then sprinkle Parmesan cheese on top. Pine nuts are a nice addition.
