Items Needed:
– Aluminum foil

Ingredients:
– 1 package of orzo
– 8 ripened tomatoes
– 2 pickled bell peppers
– Cooking cream (dairy or dairy-free)
– 1 onion
– Garlic
– 2 eggplants
– Basil
– Mozzarella
– Salt, pepper, paprika powder, and garlic powder

Instructions:
1. Cut the eggplants in half, place them in an ovenproof dish, and sprinkle them with the desired amount of garlic and seasonings. Cover with aluminum foil and bake in the oven at 200 degrees Celsius (392 degrees Fahrenheit) for 45 minutes. Remove the foil halfway through.
2. Finely chop an onion and sauté it in a pan with oil until it becomes translucent.
3. Wash and quarter the tomatoes, and add them to the pan. Also, add the 2 pickled bell peppers, chopped into pieces.
4. Cover the pan with a lid and let it soften. Break the tomatoes into smaller pieces with a spatula or blend them with an immersion blender.
5. Add the orzo along with a small cup of water and cook for 10 minutes until it’s done. Finally, add the desired amount of cooking cream and basil.
6. Now, you can assemble the plate. Serve the orzo, top it with mozzarella and basil. Add the seasoned grilled eggplant and garlic alongside.
