Ingredients:
- Onion
- Garlic
- Pumpkin (500 grams)
- Rosemary
- Burrata
- Orzo (425 grams)
- Mushrooms
- Salt and Pepper
- Optional (Cream or Crème Fraîche)
- Oil
- Bouillon (Vegetable or Chicken)
Instructions:
- Wash, peel, and chop the pumpkin into blocks. Cut the onion into large pieces and peel the desired amount of garlic. Place everything in an oven dish with rosemary, pepper, salt, and oil. Mix and bake in the oven at 220 degrees until the pumpkin is soft. Stir occasionally to prevent burning.
- Meanwhile, bring a pan with water (700 ml) to a boil and dissolve a bouillon cube in it. Once boiling, add the orzo. Slice some mushrooms and sauté them in another pan. Set aside when done.
- When the pumpkin, onion, and garlic are ready, blend them in a blender or with a hand mixer until smooth. Add this to the orzo and mix well. Let it simmer for a while.
- The orzo is ready to be plated. Spoon the orzo onto a plate, top with mushrooms, add a burrata, and garnish with rosemary and pepper.
